Here are my favorite hoilday dessert recipes Carrot Cake w/Cream Cheese Frosting 3c shredded carrots 2c sugar 2c flour 2tsp baking soda 2tsp baking powder pinch salt 1tsp cinnamon 4 eggs beaten 1 1/2c oil 1tsp vanilla 1c broken pecans Mix together flour, sugar, carrots, soda, pwder, salt & cinnamon Mix together eggs, vanilla & oil Combine with dry ingredients, mix well, add chopped or broken pecans Bake @ 350* for about 30 minutes Frost w/cream cheese frosting Cream Cheese Frosting 2-3c powdered sugar 8c softened cream cheese 1-1 1/2 rum flavoring 3/4c ground pecans Cram everything except pecans until mixed well, add pecans, then frost cooled cake Almond Brittle (so good you will never have enough!) 1/2 lb Butter ( my mother says only 'Land o Lakes') 1c sugar 1c slivered pain white almonds (without skin) Use iron frying pan-comes out better Start w/high heat, but as soon as butter starts to melt turn to medium, add sugar @almonds & stir constantly (don't stop or it will separate) till carmel colored. Pour onto cookie sheet & spread as thin as possible. |
